British Sausage Rolls

A Thanksgiving recipe for today's festive eating! Not that you need to wait for an occasion for these :) This recipe was originally published on my old blog on Christmas Eve, 2014. -- This season we craved a taste of London, so I am proud to share a successful experiment in The Classic British Sausage Roll: herby meaty bits of porky deliciousness, encased in a flaky buttery puff pastry! It sounds unusual, but some grated lemon zest really turned out to be the secret ingredient to lift and lighten what can sometimes be an overly stodgy treat. I learned the trick online,...

Homemade Kaya (Malaysian Coconut Egg Jam)

Too lazy to make it yourself? Order a tub here :) This is a version of a recipe I originally shared on my old blog on February 22nd, 2010.   After several failed attempts trying to make kaya the lazy way (using the jam function of a breadmaker then blending it afterwards), I have resigned myself to the fact that there is simply no shortcut; 75-90 minutes of patience and manual labor are absolutely essential to achieve the right consistency, color and flavor of this luscious glossy spread.   More of a custard by definition than a jam, kaya translates literally to mean...

Kabocha Korokke (Japanese Pumpkin Croquettes)

This is a repost of a recipe I first shared in 2010 on my old blog, six Halloweens ago. Still one of my favorite uses of leftover pumpkin! OK, so strictly speaking I can't call this recipe kabocha korroke as I didn't actually have any of those beautiful deep green Kabocha winter squashes (aka Japanese pumpkins) on hand. Instead, I massacred poor Count Pumpkula - our Halloween pumpkin vampire which no longer had a purpose in life beyond October 31st. The late Count Pumpkula, serving us well in life and in death. Or is that undeath?   The Kabocha squash...

Spiral Curry Puffs (Epok-Epok/Karipap Pusing)

Too lazy to make these yourself? Buy some here :) Crispy and golden on the outside with a spicy savory potato filling, this scrumptious Malaysian snack is sort of a cross between a samosa and an empanada and is usually found sold freshly fried at roadside stalls. Some versions don't bother with the spiral crust, but I can assure you it adds a delectable flaky crunch that completely elevates this traditional teatime treat to another level. The recipe below is easy though a little tedious with the multiple steps, but creates a pastry that stays crispy even when the puffs have...

Low-Carb Almond Pancakes (Gluten-Free)

Actually tastier than regular carb-laden pancakes, this is my favorite go-to breakfast recipe since I first learned how to make them 7 years ago! Made with ground almonds/almond flour in place of wheat, these beauties are not just incredibly simple and easily adapted to be sweet or savory, but are ALSO gluten-free AND high-protein to boot. A nutritious 1-2-3 if there ever was one!   Of course, if carbs aren't your concern then you can absolutely just drench the whole thing in maple syrup once you're done, as some friends of mine have confessed to doing. I say whatever makes you happy :)   Low-Carb...
