Couscous is one of my absolute favorite things when I want something grainy like rice, yet lighter and easier to prepare. Truly, this stuff cooks as fast as a cup noodle!
For a vegan version, simply use olive oil instead of butter.

Homemade Kaya (Malaysian Coconut Egg Jam)

More custard than jam, kaya translates literally to mean "rich" in Malay. A slow-cooked decadent  blend of coconut cream, eggs, and sugar fragranced with the sweet aroma of pandan.
